Food Truck Tuesdays 2025

That’s a wrap on another great summer season of Food Truck Tuesdays! We hope you had the opportunity to try the creative cuisine offered by over 20 different local trucks. We want to thank all of the great trucks who made this event possible. Read on to learn more about each truck and find ways to support them throughout the rest of the year. 

American Seoul Food

American Seoul Food is all flavor fusion, bringing Korean-American comfort food to the Colorado Springs food truck scene! Serving a mix of tradition and newfangled dishes, from pot stickers to stir-fry tacos and the bulgogi cheeseburger, American Seoul Food inspires great tastes and community connection. The team at American Seoul Food serves frequently in the area, and can be found Saturdays at the Square, local university events, air shows and festival programs alike.

Bowl in the city 08/12

Bowl in the City

Bowl in the City has been a crowd favorite at Food Truck Tuesdays, and their commitment to serving delicious Asian fusion rice bowls is why! As a staple food truck in the Colorado Springs Downtown, Bowl in the City can frequently be found serving at markets, breweries, and local festivals.

Chef Bob's Lobstah Trap

Lobster in Colorado Springs? With Chef Bob’s Lobstah Trap, authentic New England style cuisine made a splash at landlocked Food Truck Tuesdays, where food truck owner Chef Bob has been dishing out seafood for over 48 years! From lobster rolls and loaded mac n cheese, to New England Clam Chowder (pronounced “chowdah”), you’re sure to find something to enjoy.

Ciao Down Truck 1

Ciao Down

Say “ciao” to Ciao Down, a Colorado Springs-local food truck, sporting Italian-American flavors. The team behind Ciao Down is dedicated to serving authentic flavors, with many of their sandwiches inspired by traditional dishes, with their own fun twists on the classics. The Ciao Down truck operates throughout the community, serving local businesses, school events, and gives back by their partnerships at the Humane Society and Mill Rescue.

Colorado Custom Catering

Scratch-made cuisine from local restauranteurs, Colorado Custom Catering sources locally-grown ingredients for the highest quality food. They’re present in the community with their consistent engagement in local events, festivals, PPIR functions, parades, and more.

Cowgirl Kettle Corn & Lemonade

Cowgirl Kettle Corn & Lemonade has been on the food truck scene for over 10 years, serving Colorado Springs with summery sweet and sour treats. Their involvement in the Colorado Springs community has only grown over the years, making Cowgirl Kettle Corn & Lemonade one of the best-known food trucks in the area, as they serve at local festivals, community markets and events, base programs, and so much more!

Creole Roots

Creole Roots brings both southern hospitality and Louisiana flavor to Colorado Springs. Cooking authentic New Orleans Creole cuisine, the team started as a catering company before taking on the food truck, expanding their enterprise of serving NOLA Creole culture and love for food with the greater COS community. Creole Roots finds pride in serving only the freshest seafood, and have taken on food truck events like Mumbo Jumbo Gumbo and Wing Fest, as well as serving at local festivals, including Freedom Festival and Juneteenth!

Crepes

Crepes-N-Go

Crepes-N-Go returns to Food Truck Tuesdays to serve their crepe creations! Loaded crepes from either their sweet or savory menus are sure to impress, and as one of the few creperies in the area, the team at Crepes-N-Go has made a culinary niche for themselves that’s hard to beat. Find them serving at local festivals and food truck events.

Dani's Thai BBQ

Dani’s Thai BBQ serves Thai street food favorites, with an emphasis on Thai BBQ classics. The team has found their groove in the Woodland Park and greater Colorado Springs food truck community over the past five years, and can be found at local festivals, automobile shows, and farmers markets throughout the summer.

Felipe's 109

Burgers for the mind, tacos for the heart, and chili for the soul – Felipe’s 109 really couldn’t have made a better slogan. Serving up (you guessed it) burgers, tacos and chili at both their food truck and restaurant locations, Felipe’s 109 works hard to spread positivity through the community, and had a great first season with the CSPM’s Food Truck Tuesdays!

For the Love of Frybread

For the Love of Frybread truly creates their frybreads with love, and has found a niche in the food truck community to proudly serve in! Started in 2022, the team at For the Love of Frybread has curated a menu of both sweet and savory loaded frybreads, and serves through the summer at events by Pikes Peak International Raceway, County Fairs, Concerts and COS bases.

La Tapatia Tacos

La Tapatia Tacos

La Tapatia Tacos serves a menu of crowd favorite tacos and fusion dishes. Creators of the pizzabirra and quesabirra, as well as doing loaded taco boxes, La Tapatia keeps their menu fun and exciting, and serves with pride at Pikes Peak International Raceway events, festivals, movie nights, automobile shows, and Food Trucks Against Homelessness events.

Lumpia House

Lumpia House proudly serves a flavor-filled menu of authentic Filipino and Asian fusion, bringing both comfort cuisine and a culture of food sharing connection to Colorado Springs. From the heart of the Philippines to your neighborhood, Lumpia House is serving a variety of dishes – noodle dishes like lo mein and pancit, teriyaki and orange chicken, and of course, their signature lumpias. Bringing heart and hustle, we’re glad that Lumpia House was back at Food Truck Tuesdays!

Mateos Food Truck

Mateo's Catering & Personal Chef

The team at Mateo’s started in 2010 with “a tent, a grill and a dream” – in the past 15 years, they’ve successfully expanded into a award-winning food truck and catering business that proudly serves in the Colorado Springs area. With fresh ingredients and saavy flavors, they’re best known for their cheese steaks and community engagement, serving not only at food truck events but through their collaborations with nonprofit groups and efforts to feed the homeless. Craving something sweet? Try Miller’s Sweet Treats! New this year to Food Truck Tuesdays, Miller’s Sweet Treats specializes in cinnamon rolls and baked delights, and serves at local festivals, summer markets, and food truck competition events.

Pizza Paul's Perfect Pies

New York style slices really are the perfect slice, and our newest addition to Food Truck Tuesdays, Pizza Paul’s Perfect Pies, serves just that! Easy Italian food is available at this food truck year-round, as the truck often partners with local breweries and festivals.

Prime Kitchen

Prime Kitchen was new to the Food Truck Tuesdays lineup this year, and they fit right in with their brand emphasis on community engagement. They acknowledge and take pride in the community-wide effort it takes to serve their cuisine, partnering with local farmers, bakers and ranchers to produce high-quality food through their kitchen. Prime Kitchen serves American comfort food like burgers and fries, they made an excellent addition to this year’s Food Truck lineup!

Ricky's Island Cafe

Enjoy island flavor with Ricky’s Island Café food truck, a classic at the CSPM’s Food Truck Tuesdays. Hailing from Kingston, Jamacia, Ricky’s Island Café proudly serves cuisine traditional to the island, such as their jerk chicken, jerk pork, and curries. Find Ricky’s Island Café  locally at concerts, festivals and food truck rally events.

Sapo Guapo Tacos

Sapo Guapo Tacos was back this year at Food Truck Tuesdays! This family-owned business makes fresh to order tacos and Mexican cuisine, and serve proudly out of their one of a kind food truck. Find them at local community events all summer!

Smokin J's BBQ

Serving Colorado Springs for over 16 years, Smokin J’s BBQ offers made from scratch, slow-smoked barbeque. Their variety of high-quality and homemade BBQ cuts, sauces and sides truly cannot be beat. Catch them throughout the Springs as they serve at local festivals, community and musical events all year round.

Sosa's Pupuseria

Sharing rich, homemade Central American flavor, Sosa’s Pupuseria delivers a menu of traditional dishes with modern twists, inspiring a following in the Colorado Springs food truck scene. Their specialty dish, pupusas, are a El Salvador classic flatbread with a savory filling, but the team also serves a variety of other dishes, like their rolled tacos and loaded fries. The team can be found at local festival days, bases, and around the community.

Sushiya HARU

Authentic Japanese ramen and poke is available with Sushiya HARU! Chef Suk Kim has worked as a head chef for over 20 years, bringing Japanese cuisine to Colorado through the Sushiya Haru food truck in the past three years. New to the area, Sushiya Haru aims to inspire a taste for Japanese cuisine in Colorado Springs, carefully crafting a menu of traditional flavors through homemade sauces, broths, and toppings.

The Grilled Cheese Food Truck

These guys know two things – grilled cheese and corgis. The team behind The Grilled Cheese Food Truck has perfected over 30 sandwiches, and offer a rotating menu of options. The sandwiches and truck decal are inspired after the owners’ beloved corgi and off-road trails. The team’s motto, “Everyone deserves a grilled cheese”, comes through in their dedication to a vegetarian, vegan and gluten free menu, making these sandwiches as accessible as they are fun and delicious.

The Meltdown

The Meltdown

Food Truck Tuesdays kept it cool with The Meltdown, the Colorado-Springs based ice cream company serving up from their ice cream truck, bike and carts! The Meltdown brings fun and versatility to the ice cream scene, making them a great staple throughout the summer at different festivals, holiday celebrations, concerts, and citywide picnic events.
